Shrimp Fettuccine Alfredo (Low Carb & Low Calorie)

Okay so, I’m challenging myself by seeing how much weight I can lose in 30 days. I decided to combine everything I know about weight loss to make it happen. I’m doing: low carb clean foods, 1,600 calories a day, exercising everyday (500 calories a day), and drinking TONS of water, and not eating 3 hours prior to bedtime. Oh yeah; and taking my Slim Tea Detox by Somaya Reece nightly. I’ve already loss 7 1/2lbs, and its only been three days! If you follow me on Instagram, you will see a photo of this meal that is an all time favorite of mine. I got this recipe from Rachel Ray, but of coarse I tweaked it to my palette.

  1. 4 – 6 shrimp (cooked)
  2. Tofu Fettuccine noodles
  3. Raw Broccoli florets (1/2 cup)
  4. Swiss cheese wedges (3 wedges)
  5. Light Parmesan cheese (2 Tbls)
  6. Light Sour Cream (2 Tbls)
  7. Garlic, black pepper, and sea salt to taste
  8. Lots of paper towels

Rinse and dry the noodles as much as possible. Once you dry the noodles, microwave the noodles for 1 minute and 30 seconds. Remove from microwave, and add: raw broccoli florets, swiss cheese wedges, light parmesan cheese, and sour cream. Microwave for another 1 minute and 30 seconds. Add: shrimp, garlic, black pepper, and sea salt to taste and stir. ***DO NOT ADD COOKED SHRIMP UNTIL THE END OR IT WILL HAVE A RUBBERY TEXTURE.***

I personally find the tofu noodles to closely resemble the texture of regular noodles, BUT it has a bland taste. I can use A LOT of sea salt with this, and it will taste normal. If you are allergic or do not like shrimp, you can use chicken. You would add the cooked chicken at the end just like you would the shrimp. If you are vegetarian, you can avoid both shrimp and chicken. Depending on how much shrimp or chicken you use will vary the amount of calories. In the photo above, I used (6) jumbo shrimp at 25 calories per shrimp.
