Low-Carb/Low-Calorie shrimp scampi? How?!
Well; let me re-introduce you to shirataki tofu noodles, or aka. skinny girl noodles. They have 3g of carbohydrates, with 2g of fiber making them 1g of net carbs (carbs (-) fiber = net carbs) for the whole package. They are also only 20 calories for the ENTIRE package. Shrimp (in and of itself) are naturally low calorie/low carb. So this makes for an awesome meal; especially if you feel deprived on a good “pasta” dish while living the Atkins lifestyle.
The directions for this meal are very simple. You will need the following:
- Shrimp (1lb or more if you like)
- spinach
- cherry tomatoes
- shrimp scampi sauce by McCormick
- Shirataki noodles (found near produce area or other tofu products)
- goat cheese or light parmesan cheese
Shirataki noodles come ready to eat. All you have to do is toss everything into a skillet, and let it come to a simmer. Serve on a plate topped with goat cheese or light parmesan cheese.
