I went back to my vegetarian diet because I love the way I feel when I cut meat out of my diet. On my way home from work, I stopped and picked up a few items from my local farmers market so I could make a sandwich:
- Light whole wheat small pita bread
- Hummus
- Alfa Sprouts
- shredded lettuce
- Cucumber
- Tomato
- Extra Firm Tofu
- Louisiana Flour for frying Chicken
- Feta Cheese
Directions:
Chicken Fried Tofu: Dry out the tofu by draining the water from it, and placing it in paper towels. Leave the tofu wrapped in paper towels on the counter for a few hours (3 – 6 hours). Heat a pan of oil for frying. Cut tofu into medium sized blocks or buy it pre-diced. Coat the tofu blocks in Louisiana flour, and fry until golden brown. Let them drain on a paper towel, and set aside.
Open the pita and spread the hummus on the pita. Add alfa sprouts, shredded lettuce, tomato, cucumber, chicken fried tofu chunks, and feta.
If you don’t like tofu, you don’t have to use it. Add olives instead.
